  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup pineapple chunks, fresh or canned (drained)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1 cup long-grain white rice
  • 2 cups water

Instructions

  1. Rinse the rice under cold water and combine with water in a saucepan. Bring to a boil.
  2. Once boiling, reduce heat to low, cover and simmer for 15–18 minutes until tender. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chicken and cook for 5–7 minutes until golden and cooked through.
  4. Add onion and sauté for 2–3 minutes until softened; stir in garlic and cook another 30 seconds.
  5. Mix in pineapple chunks, soy sauce, honey, black pepper, and ginger; stir to coat.
  6. Reduce heat to low and simmer for about 5–7 minutes until sauce thickens slightly.
  7. Serve warm over rice.
