  • 1 large egg
  • 2 egg whites
  • 2 tablespoons fresh lime juice
  • 1/3 cup sour cream
  • 1/4 cup milk
  • 1 1/2 cups raspberries (fresh or frozen)
  • 1 cup unsalted butter for frosting
  • 4 cups sifted powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together flour, cornstarch, baking powder, and salt; set aside.
  3. In another bowl, cream softened butter and sugar until fluffy. Add lime zest and vanilla, then mix well.
  4. Beat in the whole egg and egg whites one at a time, followed by lime juice, sour cream, and milk.
  5. Gradually mix in dry ingredients until just combined.
  6. Pour batter into liners about two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool before frosting with raspberry buttercream made by mixing softened butter with powdered sugar and pureed raspberries.
