  • 2 cups leftover gumbo
  • 1/4 cup Louisiana-style hot sauce (optional)
  • 1 cup flour
  • 3 eggs mixed with 1/4 cup water (for egg wash)
  • 3 cups panko breadcrumbs
  • Cajun seasoning or salt (to taste)
  • 2 quarts oil (for frying)

Instructions

  1. Cook the white rice according to package instructions. Allow it to cool completely.
  2. In a mixing bowl, combine cooled rice with leftover gumbo and optional hot sauce until well mixed.
  3. Roll the mixture into 20 balls, about 1-2 inches in diameter.
  4. Set up a breading station with flour, egg wash, and panko breadcrumbs. Season flour as desired.
  5. Coat each ball in flour, dip in egg wash, and roll in breadcrumbs until fully coated.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the balls in batches for about 3-4 minutes or until golden brown. Drain on paper towels.
