  • 1 cup heavy whipping cream
  • 1 tablespoon cocoa powder
  • 4 ounces German chocolate or semisweet chocolate
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • Pinch of salt
  • 2 egg yolks
  • 1/4 teaspoon vanilla extract
  • 1 cup German Chocolate Frosting (homemade)

Instructions

  1. Prepare the chocolate base by boiling heavy cream and cocoa powder in a large saucepan. Simmer briefly.
  2. Remove from heat, stir in chopped chocolate until smooth, then add remaining cream.
  3. In the same pan, warm whole milk with sugar and salt until just warm.
  4. Beat egg yolks in a bowl, then slowly whisk in some warm milk to temper them. Return to saucepan.
  5. Cook until thickened enough to coat the back of a spatula (about 170°F).
  6. Strain into the chocolate mixture and stir in vanilla; cool in an ice bath before refrigerating for at least an hour.
  7. Prepare frosting while the base cools.
  8. Churn chilled mixture in an ice cream maker according to instructions, then fold in frosting before freezing until firm.
