  • 1 zucchini, sliced
  • 1 sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon chopped cilantro
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. In a bowl, combine chicken cubes with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Toss until well coated.
  2. In another bowl, mix zucchini slices and diced sweet potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Ensure all pieces are evenly coated.
  3. Preheat the grill or grill pan over medium heat. Grill the marinated chicken cubes for about 2-3 minutes on each side until they are fully cooked. Add the vegetables to the grill and cook until tender.
  4. In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and black pepper until smooth.
