  • 1½ cups long grain white rice
  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 8 corn tortillas
  • 2 ears sweet corn
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper
  • ½ medium red onion
  • 1 cup grape tomatoes
  • 2 medium jalapenos
  • 1 tablespoon chopped fresh cilantro
  • ½ medium lime (juiced)
  • 1 pinch salt
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano

Instructions

  1. Rinse rice under cold water until clear. Combine with 3 cups water and a pinch of salt in a saucepan. Bring to boil, reduce heat to low, cover, and cook for 18-20 minutes until water is absorbed. Stir in lime juice and cilantro.
  2. In a bowl, mix olive oil, salt, black pepper, chili powder, garlic powder, and oregano. Coat chicken strips in marinade and let sit for at least 10 minutes.
  3. Preheat grill or grill pan over medium-high heat. Grill chicken for about 4-5 minutes on each side until fully cooked.
  4. While chicken grills, chop avocado and other vegetables.
  5. Warm corn tortillas on the grill for about a minute on each side. Assemble bowls with rice as the base followed by grilled chicken and desired toppings.
