  • 8 cups chopped romaine lettuce
  • 1 large avocado
  • 8 slices cooked turkey bacon
  • 6 hard-boiled eggs
  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for grilling)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 medium cucumber (peeled and sliced)

Instructions

  1. In a mixing bowl, whisk together melted honey, dijon mustard, lemon juice or vinegar, avocado oil, and sea salt to create the dressing.
  2. Season chicken breasts with sea salt, black pepper, garlic powder, and onion powder.
  3. Grill chicken on medium-high heat for 6-7 minutes per side until cooked through. Let rest before slicing.
  4. In a large serving platter or bowl, layer chopped romaine followed by cherry tomatoes, red onion slices, cucumber slices, sliced avocado, turkey bacon pieces, hard-boiled egg slices, and grilled chicken strips.
  5. Drizzle honey dijon dressing over the salad before serving.
