  • 1.5 lbs boneless skinless chicken thighs or breasts
  • 2 large sweet potatoes
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: cooked quinoa or brown rice
  • Optional: mixed greens
  • Optional: avocado
  • Optional: feta cheese
  • Optional: tahini dressing

Instructions

  1. Marinate chicken by mixing olive oil, lemon juice, Dijon mustard, garlic, oregano, smoked paprika, salt, and pepper in a bowl. Add chicken and let it marinate for at least 15 minutes.
  2. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and cayenne (if desired). Roast on a baking sheet for about 25–30 minutes until tender.
  3. Preheat grill over medium-high heat. Grill marinated chicken for about 6–7 minutes per side until fully cooked (internal temperature of 165°F).
  4. Assemble your bowl with quinoa or brown rice at the base followed by mixed greens, grilled chicken slices, and roasted sweet potatoes. Top with avocado or feta cheese if desired.
  5. For tahini dressing: whisk together tahini, lemon juice, maple syrup (optional), minced garlic, salt, and enough ice water to achieve the desired consistency.
