  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1 pineapple
  • 1 tbsp olive oil
  • 5 cups chopped romaine lettuce
  • 1/2 red onion
  • 1/2 cucumber
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes

Instructions

  1. Cut the pineapple into rings and drizzle with olive oil; set aside. Season chicken breasts with olive oil, salt, pepper, thyme, garlic powder, and red pepper flakes.
  2. Preheat grill to medium-high heat. Grill chicken for 7 minutes per side until cooked through and grill pineapple for 3–4 minutes on each side until caramelized.
  3. Meanwhile, chop romaine lettuce and slice the remaining vegetables: red onion, cucumber, cherry tomatoes, and avocado.
  4. In a bowl, whisk together olive oil, lime juice, honey, garlic powder, salt, pepper, and red pepper flakes for the dressing.
  5. Once grilled items are ready, slice chicken and layer all ingredients in a serving bowl. Drizzle dressing over the top before tossing gently.
