  • 1.5 lbs salmon fillets (cut into 1-inch squares)
  • 2 large lemons (thinly sliced)
  • 2 Tbsp fresh parsley (chopped)
  • 23 garlic cloves (pressed)
  • ½ Tbsp Dijon mustard
  • ½ tsp salt
  • ⅛ tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least one hour.
  2. Preheat your grill to medium heat (375˚F).
  3. In a medium bowl, combine parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice to create the marinade.
  4. Thread salmon pieces and folded lemon slices onto two skewers at a time. Brush generously with marinade.
  5. Oil the grill grates and place skewers on them. Grill each side for about 3-4 minutes until salmon is opaque.
