  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can (28 ounces) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

  1. Preheat your oven to 350°F (175°C).
  2. Slice the zucchini into 1/2" rounds and place in a colander with a sprinkle of salt; let sit for 15 minutes to remove excess moisture.

  4. Stir in the drained diced tomatoes, Italian seasoning, salt, and pepper.
