Instructions

  1. Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat egg whites on low speed. Add cream of tartar and gradually incorporate sugar while increasing speed to high until stiff peaks form.
  3. Pipe meringue onto the prepared baking sheet, shaping into ghostly mounds.
  4. Bake for 2 hours, then turn off heat and leave meringues in the oven for an additional 30 minutes.
  5. While meringues bake, prepare buttercream by mixing softened butter, confectioners' sugar, milk, and purple gel coloring until smooth.
  6. Frost cooled cupcakes with purple buttercream and top each with a meringue ghost.
  7. Decorate meringues with black frosting for eyes and mouth.
