  • 2 lb boneless skinless chicken thighs (or breasts)
  • 20 oz can pineapple rings + ¾ cup juice
  • ⅓ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced or 1 tsp garlic powder)
  • 1 tbsp fresh ginger (minced)
  • 3 tbsp brown sugar
  • ⅓ cup ketchup
  • 2 tsp tomato paste
  • ½ tsp red pepper flakes
  • ½ tsp ground nutmeg
  • ¼ tsp chili powder
  • 3 tbsp chopped fresh cilantro (for garnish)
  • 3 green onions (chopped for garnish)
  • Long grain white rice
  • Avocado slices

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, sesame oil, minced garlic, minced ginger, brown sugar, ketchup, tomato paste, red pepper flakes, nutmeg, and chili powder to make the marinade.
  2. Place chicken in a resealable bag or dish; pour marinade over it and refrigerate for at least 20 minutes.
  3. Preheat your grill to medium-high or oven to 400°F (200°C).
  4. Remove chicken from marinade (reserve marinade) and cook on the grill or baking sheet for 5-7 minutes per side until the internal temperature reaches 165°F (74°C). Grill pineapple rings during the last few minutes.
  5. Let chicken rest before slicing; serve over rice topped with grilled pineapple and garnished with cilantro and green onions.
