  • 1 yellow bell pepper (sliced)
  • 1 onion (sliced)
  • 3 cloves garlic (minced)
  • 1 tablespoon sriracha sauce
  • 2 tablespoons honey
  • Jasmine rice for serving

Instructions

  1. Cook jasmine rice in a medium saucepan with water; bring to a boil, then simmer on low for 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until browned (6-8 minutes). Remove from skillet.
  3. Sauté garlic and ginger in the same skillet until fragrant (about 1 minute).
  4. Add sliced onion and bell peppers; sauté until tender yet crisp (4-5 minutes).
  5. Whisk together soy sauce, honey, and sriracha in a bowl; pour into the skillet with vegetables.
  6. Return chicken and pineapple to the skillet; toss gently and heat through for another 2-3 minutes.
  7. Serve over jasmine rice and garnish with fresh cilantro.
