  • ½ cup granulated sugar
  • 1 ½ cups egg whites (about 12)
  • ¼ teaspoon salt
  • 1 ¼ teaspoon cream of tartar
  • ¼ teaspoon clear vanilla extract
  • 1 teaspoon almond extract
  • 1 ⅓ cups granulated sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sift together cake flour and ½ cup sugar four times to aerate.
  3. In a large metal bowl, combine egg whites, salt, cream of tartar, vanilla extract, and almond extract. Beat until soft peaks form.
  4. Gradually add the remaining 1 ⅓ cups sugar in four additions, blending after each addition without scraping the bowl.
  5. Gently fold the flour mixture into the egg white mixture in four additions.
  6. Pour the batter into an ungreased 10-inch tube pan and cut through gently with a metal spatula to remove air pockets.
  7. Bake for about 30-35 minutes until lightly golden and springy to touch.
  8. Cool upside down to maintain its shape.
