Ingredients

  • 8 cups of water (divided)
  • 1 cup of sugar
  • Zest of 2 lemons
  • 1 1/2 cups of freshly squeezed lemon juice (about 8 lemons)
  • Ice cubes for serving

Instructions

  1. In a saucepan, combine 3 cups of water and the sugar. Bring to a boil and let it simmer for about 5 minutes until the sugar dissolves.
  2. Remove from heat and stir in the lemon zest. Allow it to cool to room temperature.
  3. In a large pitcher, mix the remaining 5 cups of water and lemon juice. Strain the cooled sugar mixture into the pitcher to remove zest.
  4. Add ice cubes and refrigerate for at least 30 minutes before serving.
