  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) great northern beans, drained
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup ditalini pasta
  • 2 tbsp olive oil
  • 1 ½ tsp basil
  • 1 tsp oregano
  • ½ tsp thyme
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion until translucent.
  2. Add the diced carrots and celery; cook for an additional 5 minutes.
  3. Push vegetables aside and brown the ground beef in the pot until fully cooked.
  4. Stir in minced garlic and spices; cook until fragrant.
  5. Incorporate crushed tomatoes and tomato sauce into the pot; mix well.
  6. Pour in beef broth and bring to a boil.
  7. Lower heat to simmer; add drained beans and ditalini pasta. Cook for about 10–12 minutes until pasta is tender.
  8. Serve hot, adjusting seasoning as needed.
