  • salt and pepper (to taste)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 1 tbsp grated ginger
  • 2 cloves garlic (minced)
  • 1 tbsp cornstarch (dissolved in 2 tbsp water)
  • 2 cups cooked rice (white or brown)

  • green onions (optional garnish)

Instructions

  1. Season chicken with salt and pepper, then coat in flour.
  2. Heat oil in a skillet over medium-high heat and cook chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
  3. In the same skillet, sauté ginger and garlic until fragrant, about 30 seconds.
  4. Add pineapple juice, soy sauce, and brown sugar; bring to simmer.
  5. Stir in pineapple chunks; thicken sauce by whisking in cornstarch mixture.
  6. Return chicken to skillet; coat well with sauce and simmer for another 2 minutes.
  7. Serve over cooked rice and garnish as desired.
