  • 1 cup carrots
  • 1.5 lbs red or yellow potatoes
  • 2 cups spinach
  • 5 cups chicken broth
  • 1/2 cup heavy cream (or plant-based alternative)
  • Fresh thyme or parsley for garnish

Instructions

  1. In a large pot over medium heat, cook crumbled sausage, chopped onion, and minced garlic for 7–10 minutes until browned. Drain excess fat, leaving about a tablespoon.
  2. Stir in Italian seasoning, paprika, red pepper flakes, and tomato paste for one minute to toast the spices.
  3. Add chicken broth, scraping the pot's bottom to dissolve the tomato paste. Bring to a boil.
  4. Incorporate cubed potatoes and diced carrots; reduce heat to medium-low and simmer uncovered for 15–25 minutes until potatoes are fork-tender.
  5. Stir in fresh spinach; cook until wilted, about 2–3 minutes.
  6. Lower heat again and gently mix in heavy cream without boiling. Season with salt to taste.
  7. Serve hot, garnished with fresh herbs and extra red pepper flakes if desired.
