  • 1 pound ground chicken (or beef/turkey)
  • 1 egg
  • 1 tablespoon tapioca flour
  • 4 tablespoons soy sauce (or tamari)
  • 3 tablespoons apple vinegar (or broth)
  • 1 inch ginger (grated)
  • Oil (sesame or vegetable)
  • 12 tablespoons sugar
  • Toasted sesame seeds (hemp seeds, seaweed, orange and tangerine peel, ginger, and peppercorn) for garnishing

Instructions

  1. Prepare the sauce by mixing soy sauce, apple vinegar, and sugar in a small bowl. Set aside.
  2. In a large bowl, combine ground meat with grated ginger, soy sauce, egg, and tapioca flour. Knead until well mixed.
  3. Shape the mixture into 2-inch balls.
  4. Heat oil in a frying pan over medium heat and cook meatballs until browned on all sides. Cover and lower heat to cook through.
  5. Add the prepared sauce to the pan, cooking until thickened while coating the meatballs.
