  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 medium Onion
  • 2 medium Carrots
  • 2 cloves Garlic
  • 1 lb Celery root
  • 6 cups Beef bone broth
  • 1 can Diced tomatoes
  • 2 medium Bay leaves

Instructions

  1. Season beef with sea salt and black pepper.
  2. Sear beef in olive oil over medium heat until browned; set aside.
  3. Sauté onions and carrots in the same pot until soft.
  4. Add garlic and Italian seasoning; cook until fragrant.
  5. Return beef to the pot with broth, tomatoes, and bay leaves.
  6. Simmer for 45-60 minutes until beef is tender.
  7. Incorporate cubed celery root; simmer for an additional 15 minutes.
  8. Adjust seasoning before serving.
