  • 2.5 oz beef rinds (approx. 1 cup)
  • 1/2 cup grated Parmesan

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchinis into matchsticks, leaving some peel on for added texture.
  3. In a mixing bowl, whisk together the eggs and heavy cream until well blended.
  4. Process the beef rinds in a food processor until they resemble fine breadcrumbs; then mix in the grated Parmesan.
  5. Dip each zucchini stick into the egg mixture, ensuring it's fully coated, then roll it in the beef rind mixture until thoroughly covered.
  6. Arrange the coated zucchini on a baking rack placed over a baking sheet and bake for about 15-20 minutes until crispy.
