1 tablespoon gochujang (Korean chili paste)
1 tablespoon honey
1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/2 cup mayonnaise
1 tablespoon sriracha
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper
1 cup cooked rice
2 large eggs, scrambled
1 cup shredded carrots
1/2 cup chopped cucumber
1/4 cup chopped green onions
1/4 cup chopped cilantro
Instructions
Marinate the chicken by combining it with soy sauce, gochujang, honey, sesame oil, garlic powder, black pepper, and optional red pepper flakes in a mixing bowl. Let it sit for at least 30 minutes.
Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 2-3 minutes per side until fully cooked.
Prepare the spicy mayo by whisking together mayonnaise, sriracha, lemon juice, garlic powder, salt, and black pepper in a small bowl.
To assemble the bowls, layer warm rice at the bottom followed by scrambled eggs and fresh veggies. Top with grilled chicken and drizzle generously with spicy mayo.
