  • 4 sea bass fillets (about 6 oz each)
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 10 oz fresh spinach
  • 1/2 cup coconut milk or cashew cream
  • 1/4 cup grated Parmesan cheese
  • Pinch nutmeg (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the sea bass dry and season both sides with salt and pepper.
  2. In a small bowl, combine minced garlic, lemon zest, lemon juice, and melted butter.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the sea bass fillets for 2–3 minutes on each side until golden brown; drizzle with the lemon-garlic mixture.
  4. Transfer the skillet to the oven and bake for 8–10 minutes until the fish flakes easily with a fork.
  5. While baking, melt butter in a large skillet over medium heat. Sauté chopped onion and garlic until softened, then add spinach until wilted. Stir in coconut milk or cashew cream, Parmesan cheese, salt, pepper, and optional nutmeg; cook until slightly thickened.
  6. Serve by placing creamed spinach on plates topped with the sea bass garnished with fresh parsley.
