  • Salt and pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  4. Lower heat, stir in heavy cream, and simmer until slightly thickened. Add Parmesan cheese until melted.
  5. Stir in spinach until wilted, return chicken to pan, spoon sauce over each piece, sprinkle with additional Parmesan, cover for 2 minutes.
