  • 2 cups cooked shredded organic chicken
  • 1 (16 oz.) package potato gnocchi
  • 4 cups organic chicken stock
  • 1 ½ cups organic heavy cream
  • 3 Tbsps cooking apple vinegar
  • 1 cup chopped organic kale
  • 56 organic sundried tomatoes
  • 1 Tbsp Extra virgin olive oil
  • 2 Tbsps unsalted butter
  • 4 garlic cloves, minced
  • 3 Tbsps organic all-purpose flour
  • 1 1/2 Tbsps Tuscan Marry Me blend
  • 1 tsp sea salt
  • 1 Tbsp tomato paste, organic
  • 1/2 lemon, freshly-squeezed
  • 1 cup freshly-grated parmesan
  • 1 Homemade Texas Toast Garlic Bread

Instructions

  1. In a large pot over medium heat, combine olive oil and butter. Once melted, add minced garlic and sauté until fragrant.
  2. Stir in the shredded chicken and cook for about 2 minutes after adding flour to lightly toast.
  3. Gradually pour in chicken stock while stirring continuously to avoid lumps. Bring to a gentle simmer.
  4. Add gnocchi, sundried tomatoes, tomato paste, and heavy cream; let simmer for about 5 minutes until the gnocchi are tender.
  5. Mix in Tuscan spices, sea salt, kale, cooking apple vinegar, and lemon juice; stir well and simmer for another few minutes.
  6. Serve hot with freshly grated parmesan on top.
