  • 14 ounces rigatoni pasta
  • 3 tablespoons butter
  • 1 onion, finely chopped
  • 1/3 cup plain flour (all-purpose)
  • 2 1/2 cups milk
  • 2 1/2 cups strong cheddar cheese, grated
  • 12 ounces canned chicken (drained and flaked)
  • 12 ounces canned sweetcorn (drained)
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Boil salted water in a large pot and cook the rigatoni until al dente. Drain and set aside.
  3. In a saucepan over medium heat, melt the butter. Add the chopped onion and sauté until soft.
  4. Stir in the flour for about one minute before gradually whisking in the milk until smooth.
  5. Cook the sauce until thickened; then combine it with cooked rigatoni, chicken, sweetcorn, peas, salt, and pepper in a large bowl.
  6. Transfer the mixture into a greased baking dish and top with additional grated cheese.
  7. Bake for 15–20 minutes or until golden brown and bubbling.
