  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ¼ cup fresh herbs (parsley or dill)

Instructions

  1. Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak and marinate for at least 30 minutes.
  2. Prepare tzatziki: In a small bowl, mix Greek yogurt with grated cucumber, lemon juice, minced garlic, dill, salt, and pepper.
