Ingredients

Scale
  • 4 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 tsp Salt
  • 2 1/4 tsp Instant Yeast
  • 1 1/4 cups Cold Whole Milk
  • 1 cup Unsalted Butter
  • 16 Chocolate Batons
  • 1 tbsp Milk for brushing

Instructions

  1. In a large bowl, mix flour, sugar, salt, and instant yeast. Gradually add cold milk until combined.
  2. Knead on a floured surface for about 5 minutes until smooth.
  3. Flatten butter between parchment paper into a rectangle. Roll out dough into a larger rectangle to encase the butter.
  4. Fold dough over the butter and roll out again to about 1/4 inch thick. Fold into thirds and refrigerate for 30 minutes; repeat twice.
  5. Roll out final dough into another rectangle and cut triangles. Place one chocolate baton at the base of each triangle and roll tightly.
  6. Preheat oven to 400°F (200°C), brush croissants with milk, and bake for 15-20 minutes until golden brown.
