Instructions

  1. Wash, hull, and dry strawberries thoroughly.
  2. Coat each strawberry with sweet red bean paste or whipped vanilla cream; chill briefly.
  3. In a mixing bowl, combine mochiko, sugar, salt, and water; mix until smooth.
  4. Heat the mixture in a microwave-safe dish for 2½–3½ minutes until glossy and stretchy.
  5. Dust a clean surface with potato starch; turn out the dough to cool slightly.
  6. Cut the dough into 8 equal pieces; flatten each into circles.
  7. Place a chilled strawberry on each circle and wrap the dough around it; seal at the top.
  8. Allow mochi to rest for 10 minutes before serving.
