  • 4 chicken drumsticks
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 ½ cups rice (uncooked)
  • 1 ½ cups chicken stock
  • 1 ¼ cups water
  • Fresh parsley (for garnish)
  • 2 tablespoons butter (cut into pieces)
  • Oil spray
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • Black pepper

Instructions

  1. Preheat the oven to 350°F. Spread chopped onions in a baking dish and top with butter pieces. Bake for about 15 minutes until onions start to brown.
  2. Mix dried thyme, garlic powder, paprika, onion powder, salt, and black pepper in a bowl. Rub the mixture over the chicken drumsticks.
  3. Layer uncooked rice over the browned onions in the baking dish. Pour in chicken stock and water; add minced garlic and stir well.
  4. Place seasoned chicken on top of the rice mixture. Cover with foil and bake for 30 minutes.
  5. Uncover and lightly spray tops of chicken with oil spray before returning to the oven for an additional 15 minutes until fully cooked.
  6. Garnish with fresh parsley before serving.
