  • 1/2 cup lightly salted peanuts, chopped
  • 6 ounces rice noodles
  • 4 tablespoons soy sauce
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger (or paste)
  • juice of 2 limes
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • 2 tablespoons sesame oil
  • 12 leaves of lettuce (like Boston lettuce)
  • chopped cilantro, green onions, and peanuts for topping

Instructions

  1. Prepare the sauce by whisking together soy sauce, sambal oelek, honey, ginger, garlic, lime juice, green onions, and sesame oil in a bowl.
  2. In a mixing bowl, combine ground chicken and chopped peanuts with 3/4 of the sauce; marinate for 15 minutes.
  3. Soak rice noodles in water until softened; drain and cut into small pieces.
  4. Heat sesame oil in a skillet over medium heat; add the marinated chicken mixture and sauté until cooked through (about 10 minutes). Stir in soaked noodles and cook for an additional 5 minutes.
  5. Assemble wraps by spooning filling into lettuce leaves and topping with cilantro, extra green onions, peanuts, and reserved sauce.
