  • 1 cup pineapple chunks (fresh or canned)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly grated ginger
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through. Remove from skillet.
  2. In the same skillet, add onion, garlic, and bell pepper; cook until fragrant.
  3. Stir in pineapple chunks and heat through for about two minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper; bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender.
  6. Return chicken to skillet; stir gently to combine and heat through.
  7. Garnish with green onions and sesame seeds before serving.
