  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 piece Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)

Instructions

  1. Cut chicken into bite-sized pieces. Heat oil in a skillet over medium heat and sauté garlic until fragrant.
  2. Add chicken to the skillet and cook until browned and fully cooked through, about 5–7 minutes.
  3. In a mixing bowl, combine soy sauce, pineapple juice, honey, rice vinegar, and cornstarch mixed with water; stir until smooth.
  4. Pour sauce over chicken in the skillet and let simmer for about 5 minutes until thickened.
  5. Stir in cooked rice, pineapple chunks, diced bell pepper, and green onions; mix gently until heated through.
  6. Serve hot, garnished with sesame seeds and crushed red pepper if desired.
