  • 1 cup diced pineapple

  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  2. In the same skillet, sauté minced garlic until fragrant. Add carrots, peas, and bell peppers; cook until tender.
  3. Push vegetables to one side of the skillet and add cooked rice to the other side. Stir to combine.
  4. Add pineapple and stir-fry until well mixed.
  5. In a small bowl, mix soy sauce with the stir-fried mixture; season with salt and pepper.
  6. Mix in the cooked chicken thoroughly and heat through for a couple of minutes before serving.
