  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup fresh or canned pineapple chunks, drained (reserve juice)
  • 1 bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup white or jasmine rice, rinsed
  • 2 tablespoons soy sauce (or gluten-free tamari)
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons vegetable oil or sesame oil, divided
  • 1/4 cup water or chicken broth

Instructions

  1. Cut the chicken into bite-sized pieces.
  2. Dice the bell pepper, chop green onions, drain pineapple chunks, mince garlic, and grate ginger.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat and cook chicken until golden brown (about 5 minutes). Remove and set aside.
  4. In the same skillet, add more oil if needed; sauté garlic, ginger, and bell peppers for 2-3 minutes until fragrant.
  5. Stir in rinsed rice to lightly toast for about a minute; add pineapple chunks and reserved juice.
  6. Return chicken to the pan; pour in soy sauce, brown sugar (or honey), and water/broth. Cover and reduce heat to medium for about 15 minutes until rice is tender.
  7. Fluff rice with a fork; garnish with chopped green onions and drizzle with sesame oil if desired.
