  • 500g (4 cups) bread flour
  • 75g (1/3 cup) granulated sugar
  • 10g (2 tsp) instant yeast
  • 10g (2 tsp) salt
  • 300ml (1 1/4 cups) cold whole milk
  • 60g (4 tbsp) unsalted butter, melted
  • 250g (1 cup + 2 tbsp) cold European butter
  • 200g dark chocolate (70% cocoa), chopped
  • 150g (1 cup) roasted pistachios, shelled
  • 50g (1/4 cup) brown sugar

Instructions

  1. In a large bowl or stand mixer, combine flour, sugar, yeast, and salt. Add cold milk and melted butter; knead until smooth for about 8 minutes. Wrap and refrigerate for at least 4 hours.
  2. Prepare the butter block by pounding cold European butter into an 8-inch square between parchment paper; chill until ready.
  3. Roll the refrigerated dough into a rectangle and place the butter block on half; fold over and roll out again. Chill and repeat folding two more times.
  4. For the filling, pulse pistachios with brown sugar until coarsely ground.
  5. Roll out laminated dough into a large rectangle; cut into rectangles, add chocolate and filling, then roll tightly.
  6. Let croissants rise covered for about 2-3 hours until doubled in size. Preheat oven to 400°F (200°C), brush with egg wash, sprinkle toppings, and bake for 18–20 minutes until golden.
