  • ¼ cup granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp active dry yeast
  • 1 cup cold unsalted butter
  • ¾ cup cold milk
  • 1 cup ground pistachios
  • ½ cup powdered sugar
  • ¼ cup almond flour
  • 1 egg (for filling and wash)
  • Optional toppings: crushed pistachios, honey

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk until dough starts to form. Incorporate cold butter by layering it into the dough.
  2. Chill the dough for at least one hour. Roll out into a rectangle; fold into thirds and chill again.
  3. Prepare the pistachio filling by mixing ground pistachios, powdered sugar, almond flour, softened butter, egg, and vanilla until smooth.
  4. Roll out the laminated dough into triangles; add filling and shape into croissants.
  5. Let rise for about 1 to 1.5 hours until puffy.
  6. Brush with egg wash and sprinkle with crushed pistachios before baking at 375°F for 18–22 minutes.
