  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans, toasted (omit for nut-free)

Instructions

  1. Preheat your oven to 375°F. Grease a 9×9-inch baking dish.
  2. In a large bowl, mix together oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, whisk together pumpkin puree, milk, eggs, maple syrup or honey, melted butter or coconut oil, and vanilla extract until combined.
