  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat oven to 325°F (163°C). Prepare mini pumpkins or ramekins by cutting tops off mini pumpkins and scooping out seeds, or set ramekins aside.
  2. In a bowl, whisk egg yolks and granulated sugar together until combined. In a saucepan over medium heat, mix heavy cream, vanilla extract, pumpkin puree, cinnamon, ginger, and salt until warmed but not boiling.
  3. Gradually whisk the warm cream mixture into the egg yolk mixture to avoid cooking the eggs.
  4. Pour the custard into prepared pumpkins or ramekins, place them in an oven-safe dish filled with hot water halfway up the sides, and bake for about 30 minutes until set but slightly jiggly.
  5. Cool on wire racks and refrigerate for at least 2 hours. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden.
