  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13-inch baking dish.
  2. In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt. Add melted butter and stir until combined.
  3. Press half of the crumble mixture into the bottom of the baking dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Spread the pumpkin filling evenly over the crumble base.
  6. Sprinkle the remaining crumble mixture on top and add walnuts if desired.
  7. Bake for 30–35 minutes until golden brown and set.
  8. Allow to cool completely before slicing into squares.
