  • 960 ml chicken broth
  • 240 ml heavy cream
  • 225 g large shrimp, peeled and deveined
  • 2 red snapper fillets (about 170 g each)
  • 1 tablespoon Cajun seasoning
  • 28 g unsalted butter
  • 50 g grated Parmesan cheese
  • 15 ml olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a medium saucepan, bring chicken broth to a boil. Gradually whisk in grits and reduce heat to low. Cook uncovered for 20–25 minutes until thickened. Stir in heavy cream, butter, and cheddar cheese; season with salt and pepper.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Toss shrimp with Cajun seasoning and add to the skillet along with minced garlic. Cook shrimp for 2–3 minutes per side until pink and opaque; set aside.
  3. Pat red snapper fillets dry, season with Cajun seasoning, then cook in the same skillet until golden brown on both sides.
  4. For the Cajun cream sauce, sauté garlic in melted butter, then add Cajun seasoning, smoked paprika, chicken broth, and heavy cream. Simmer until thickened before stirring in Parmesan cheese.
  5. Serve grits topped with red snapper and shrimp drizzled with sauce.
