  • 1/4 cup vegetable or canola oil
  • 2 heaping tablespoons plain Greek yogurt
  • 20 mini Reese’s Peanut Butter Cups (plus extra for garnish)
  • 1/2 cup butter (room temperature)
  • 1 1/2 cups creamy peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, combine the cake mix, eggs, milk, oil, and Greek yogurt. Mix until smooth.
  3. Fill each cupcake liner halfway with batter. Place one mini Reese’s Peanut Butter Cup in the center of each and top with more batter until two-thirds full.

  5. For the frosting, beat together the butter and peanut butter until creamy. Gradually add powdered sugar and adjust consistency with milk as needed.
  6. Frost cooled cupcakes and top with additional mini Reese’s if desired.
