  • 500 g pumpkin (3 cups), diced
  • 2 garlic bulbs
  • 3 tbsp olive oil
  • 1/2 cup white apple vinegar
  • 3 cups chicken or vegetable stock
  • 2 cups small pasta
  • 50 g parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200 degrees Celsius (390 degrees Fahrenheit).
  2. Prepare the vegetables by cutting off the top of each garlic bulb and placing it alongside the pumpkin and rosemary in an oven-proof dish. Drizzle with olive oil, season with salt and pepper, and roast for 45 minutes until softened.
