  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1.5 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • 0.5 cup coconut milk
  • Vegetable oil for frying

Instructions

  1. Soak pineapple rings in dark and coconut rums for at least 1 hour. Drain and pat dry.
  2. Prepare three shallow bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  3. Coat each pineapple ring first in flour, then dip in egg mixture, and finally roll in coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the coated rings for about 1 minute per side until golden brown.
  5. For the dipping sauce, mix softened cream cheese with powdered sugar and reserved rum until smooth.
