  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes.
  3. In a mixing bowl, beat cream cheese until smooth; blend in sugar, eggs one at a time, vanilla extract, and sour cream until combined. Pour over cooled crust.
  4. Bake in a water bath for 55-65 minutes until slightly jiggly. Cool in the oven for an hour before refrigerating for at least 4 hours.
