  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  2. Shape the mixture into 1-inch meatballs and set aside.
  3. Heat olive oil in a pot over medium heat and brown meatballs on all sides (about 5 minutes). Remove and set aside.
  4. Sauté chopped onions in the same pot until translucent (3-4 minutes).
  5. Add chicken broth and bring to a boil; then reduce to a simmer.
  6. Return meatballs to the pot and simmer for 15 minutes.
  7. Stir in heavy cream and fresh spinach until wilted (about 2 minutes).
