  • 2 pounds beef (chuck or brisket)
  • 3 tablespoons olive oil
  • 16 ounces small pearl onions (sweet variety)
  • 4 cloves garlic (fresh)
  • 1 cup red apple vinegar
  • 28 ounces crushed tomatoes
  • 1 stick cinnamon stick (optional)
  • 2 bay leaves (discard before serving)
  • 1 teaspoon dried oregano
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Gather all ingredients and chop garlic; peel pearl onions if using fresh.
  2. In a Dutch oven over medium-high heat, warm olive oil.
  3. Cut beef into chunks, season with salt and pepper, then sear until browned on all sides (5-7 minutes). Remove beef and set aside.
  4. In the same pot, cook pearl onions until golden brown; add garlic and sauté for an additional minute.
  5. Deglaze the pot with red apple vinegar, scraping up any bits stuck to the bottom; simmer for about 2 minutes.
  6. Return seared beef to the pot, adding crushed tomatoes, cinnamon stick, bay leaves, oregano, and honey; stir to combine.
  7. Cover and simmer on low heat for about 120 minutes until beef is tender.
  8. Before serving, remove bay leaves and cinnamon stick; taste and adjust seasoning as necessary. Garnish with fresh parsley.
