  • 1 avocado, sliced
  • 1 cup baby potatoes, halved
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp chili powder or paprika
  • 1 tbsp chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 200C (400F). Toss halved baby potatoes with olive oil, salt, pepper, and optional garlic powder. Spread them evenly on a baking tray and roast for 20-25 minutes until golden brown and tender.
  2. In a mixing bowl, whisk together the eggs. Heat a nonstick pan over medium-low heat and pour in the eggs. Stir gently until soft and fluffy. Season with salt and pepper.
  3. While the eggs are cooking, slice the avocado and cherry tomatoes. Lightly season them.
  4. In a serving bowl, layer scrambled eggs at the bottom, followed by roasted baby potatoes, avocado slices, and cherry tomatoes. Finish with chili powder and chopped green onions.
