  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 1 ½ cups Gruyère cheese, shredded
  • 2 tsp fresh thyme, chopped
  • Salt and pepper, to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, melt the unsalted butter. Add sliced onions and sauté until golden brown. Stir in minced garlic and thyme until fragrant.
  3. Layer half of the sliced potatoes in the greased baking dish, followed by half of the sautéed onion mixture. Repeat layers until all ingredients are used.
  4. Pour low-sodium beef broth evenly over the layers and top with shredded Gruyère cheese.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown on top.
  6. Allow to rest for a few minutes before serving.
